ENslaved people in Saint-Domingue grew the joumou and cooked the soup. They were forbidden to eat it.
On January 1, 1804, Haitians made it the first meal of the free republic, and it has been eaten every Independence Day since. In 2021 UNESCO inscribed it on the Representative List of the Intangible Cultural Heritage of Humanity — Haiti's first. A people took the food made by their hands and denied to their mouths, and kept it. That is the whole argument of this business, in a bowl.
